Spinach, Strawberry, and Pecan Salad

This three-ingredient salad is a refreshing spring favorite. Both organic strawberries and organic spinach are recommended, as both items frequently top the Environmental Working Group’s Dirty Dozen list. Use a high-quality, aged balsamic vinegar, one you could sip from a cup, to impart a sweet versus bitter addition to the salad.

Ingredients

  • 8 cups organic spinach, washed and torn into bite-size pieces
  • 2 cups organic strawberries, washed, greens removed and sliced
  • ½ cup pecans, toasted and coarsely chopped
  •  

  • Dressing
  • ½ cup balsamic vinegar
  • ¼ cup extra-virgin olive oil
  • salt and freshly ground black pepper to taste

Directions

  • In a large bowl, combine spinach, strawberries, and pecans.
  • Whisk together balsamic vinegar, olive oil, salt, and pepper. Drizzle just enough over the salad to lightly coat. Store the remainder in an air-tight jar in a cool place.
