Kohlrabi and Apple Slaw with “Creamy” Mustard Dressing
Not sure what to do with those kohlrabis you discovered in your CSA share this week? Here is an incredibly easy, refreshing way to use those strange, firm, purple or green, root vegetables. The Cashew Cream provides a wonderful creamy, non-dairy addition. This recipe yields at least 6, which makes it a vitamin-packed addition to your next barbecue or pot-luck picnic

Ingredients
- ½ cup cashew cream
- 2 tablespoons fresh lemon juice
- 2 tablespoon coarse-grained mustard
- 2 bunches kohlrabi (about 2 pounds), bulbs peeled and cut into julienne strips, stems and leaves discarded
- 1 Granny Smith apple, peeled, cored, and julienned
- Salt and pepper
Directions
- In a large bowl, whisk together first three ingredients. Then stir in the kohlrabi and apple, combine well, add salt and pepper to taste.
